No-Bake Almond Cashew Chocolate Cookies

  • Dry roasted almonds and cashews: Roasting nuts deepens their flavor and gives them a crisper texture. Check How to roast nuts for instructions.
  • Pitted dates: Put pitted dates in a bowl and cover them with water. Soak at room temperature for 2 hours or more until soft.
  • Cacao powder: Use raw or regular cacao powder.
  • Coconut flour: Coconut flour is made from coconut flesh that has been dried and finely ground. It’s not the same as shredded or desiccated coconut.
  • Gingerbread spice mix: If you need a substitute, you can just use Pumpkin Pie Spice or cinnamon powder instead.
  • Maple syrup (optional): If needed, for extra sweetness.

How to make it

Soaking dates: Put pitted dates in a bowl and cover them with water. Soak at room temperature for a couple of hours until soft.

Step 1

Drain dates really well after soaking them – you can use a fork to remove any excess water.

Step 2

Place dates, dry roasted almonds and dry roasted cashews (check How to roast nuts), cacao powder, coconut flour, and gingerbread spice mix into a food processor and process until the mixture sticks together. Adjust sweetness if needed by adding 1 tablespoon of maple syrup.

Step 3

Form the dough into small cookies using your hands or by pressing the dough out on parchment paper and using a cookie cutter (my cookie cutter measures approx. 5-6 cm in diameter).

Step 4

Drizzle each cookie with melted dark chocolate and garnish with dried strawberries.

Storing

Store in the refrigerator.

How to roast nuts

Roasting nuts deepens their flavor and gives them a crisper texture. Here is how to do it:

  • Preheat oven to 180 °C.
  • Spread the nuts in an even layer on the baking sheet.
  • Place in oven and roast for 10-15 minutes.
  • Stir or shake the tray every 5 minutes to help the nuts to cook evenly.
  • When the nuts are browned and smell nutty, remove from the oven and immediately transfer onto a plate or another baking sheet.
