  • White rice flour: White rice flour is a delicate neutral tasting gluten-free flour that I use quite often in gluten-free baking. 
  • Oat flour: Oat flour is a nutritious, unrefined flour that lends great texture to baked goods.
  • Finely ground almonds: Use plain, raw almonds with no added oil or salt.
  • Potato starch: Potato starch is a pure starch extracted from potatoes. It has a light, powdery, flour-like consistency. It improves crispness resulting in a more delicate texture of the cookies. It is naturally wheat-free and gluten-free.
  • Coconut sugar: It can be subbed with brown sugar or regular white sugar.
  • Coconut cream: The thickened coconut cream from a can of full-fat coconut milk. It provides a rich taste and more flavor overall.
  • Granny Smith apples: Granny Smith apple is my go-to apple for any baked or cooked recipe. They have that perfect sweet-tart flavor and hold up well under heat. 
  • Gingerbread spice mix: If you need a substitute, you can use Pumpkin Pie Spice or cinnamon powder instead.

How to make it

Step 1

Preheat oven to 180 °C. Line a baking sheet with a non-stick baking paper.

Step 2

In a large mixing bowl combine dry ingredients: white rice flour, oat flour, finely ground almonds, potato starch,  coconut sugar, spices, and baking powder.

Step 3

Peel and core Granny Smith apples. Then, grate apples using a cheese grater.

Important note: Transfer the shredded apples to a colander and use your hands to squeeze out most of the excess juice from the apples. You’ll be left with approx. 100 g of apple pulp.

Step 4

Add coconut cream (the thickened coconut cream from a can of full-fat coconut milk) and apple pulp to the bowl with dry ingredients and mix until all is well combined and the dough begins to stick together. Adjust sweetness if needed.

Step 5

Roll the cookie dough into 12 balls, gently flatten the balls with your palm, and place them on baking sheet, leaving a bit of space between each ball. 

Step 6

Bake for approx. 18-20 minutes.

Step 7

Let the cookies cool completely until transferring them to a cooling rack.

Ingredients
  

  • 70 g white rice flour
  • 70 g oat flour
  • 70 g ground almonds
  • 25 g potato starch
  • 60 g coconut sugar
  • 1/2-1 teaspoon gingerbread spice mix
  • 1 teaspoon baking powder
  • 70-80 g coconut cream the thickened coconut cream from a can of full-fat coconut milk
