Easy gluten-free cookie recipe

Meet the ingredients
- White rice flour
- Fine almond flour
- Potato starch
- Coconut butter
- Agave or maple syrup
- Rice milk
- Gingerbread spice mix (optional)
How to make it
Step 1
Preheat oven to 180 °C. Line a baking sheet with non-stick baking paper.
Step 2
Melt coconut butter in a medium pot over low heat. Stir until smooth.
Step 3
In a large mixing bowl combine white rice flour, fine almond flour, potato starch, and gingerbread spice mix (optional).
Step 4
Mix in melted coconut butter, agave syrup, and rice milk. Use a hand mixer and mix briefly (10-15 seconds) until all is well combined. The dough might still look crumbly so use your hands and mix until the dough begins to stick together.
Step 5
Roll the dough out between two pieces of baking paper (make sure not to roll it out too thin). Using a small star shaped cutter, cut out approx. 24 stars.
Step 6
Place the cookies on the baking sheet and bake for approx. 15-17 minutes or until slightly golden.
Step 7
Let the cookies cool for a few minutes until transferring them to a cooling rack.
Serving suggestion
Sprinkle with powdered xylitol or powdered sugar (optional).
