Easy Tofu Scramble Recipe
Easy Tofu Scramble with Mushrooms – quick and easy to make, high in protein, flavorful, and satisfying. An alternative to scrambled eggs!
This protein loaded dish is great on its own, but it’s also super yum as a filler for a wrap. Perfect for breakfast, lunch or dinner!
This recipe is vegan (dairy-free), gluten-free, nut-free, and grain-free.
Meet the ingredients
This is what you’ll need to make it:
- Olive oil
- Brown button mushrooms (Cremini mushrooms)
- Firm tofu
- Spices: smoked paprika powder, turmeric, oregano
- Salt
- Plant-based milk (unsweetened)
Note: The best kind of tofu for a tofu scramble is a firm tofu. Avoid softer varieties, especially silken tofu.
What is tofu?
Tofu is made from condensed soy milk using a process similar to cheesemaking. It comes in several different consistencies: Extra firm, firm, soft, or silken.
Tofu is considered an excellent food from a nutritional and health perspective. And here is why:
- It is naturally gluten-free and low in calories.
- It is high in protein and contains all of the essential amino acids your body needs.
- It is a valuable plant source of iron and calcium and the minerals manganese and phosphorous.
How to make it
STEP 1
Remove tofu from package, and , if needed, use a kitchen towel to pat it as dry as possible.
STEP 2
Crumb the tofu into small chunks with a fork or your hands and set aside.
STEP 3
Heat the olive oil in a large pan over medium heat. Add mushrooms to the pan and cook for about 4-5 minutes, or until softened.
STEP 4
Once mushrooms are cooked, add tofu and season it with smoked paprika powder, turmeric, salt and oregano.
STEP 5
Add a couple of tablespoons of unsweetened plant-based milk, stir to combine, and sauté for another 4-5 minutes.
Serving suggestion
Serve with rice and gluten-free bread.
